Soup is a wonderful meal because you can make it in large batches and then keep it in the freezer for those days when you don’t really feel like cooking. Not to mention most soups are usually high on vegetables and lower in carbs and fats.
Soup is usually considered a winter meal and it is often stodgy and filling but this carrot and coriander soup is much lighter and works just as well all year round.
The recipe I use is this one from BBC GoodFood. Unlike many recipes, this one doesn’t contain cream. Since I’m not a big fan of creamy soups and am also lactose intolerant, that’s a big plus for me!
Just serve it with some delicious, wholewheat, farmhouse-style bread and butter!
