Manchego, Pear and Prosciutto Salad

This is probably my absolute favourite salad of all time. It’s another meal inspired by a dish at a restaurant, this time Noir, that I loved so much I had to go home and attempt to recreate it.

IMG_0112I don’t have a recipe as such, I just keep adding until the proportions look right, but here are the ingredients:

  • Chopped salad leaves
  • Finely sliced pear
  • Chopped or grated Manchego cheese
  • Chopped Prosciutto
  • Chopped Walnuts

I usually toss it in a light dressing of 50:50 Olive Oil and Lemon juice. Delicious.
