If you follow me on Instagram you’ll have seen me post about this incredible tomato, avocado, cilantro salsa that I just can’t stop eating! It’s so fresh and delicious and it goes with everything, or on its own for lunch.
It originally came from this recipe for beef tacos which I made a week or so ago. It was incredibly delicious and I will definitely be making it again.
I really don’t like hot spice, so I took the advice and switched out ancho chile powder instead of the spicier stuff and it worked great. I also left the hot sauce out of the salsa.
I think tacos are a great way to eat a vegetable-focused meal. Too many of my go-to meals focus around the carbs and/or the meat and the vegetables always end up being an afterthought. I’m trying to change that by starting with the vegetables and then adding the meat as an afterthought, maybe not including carbs at all. Tacos do that so well so I’m looking out for more taco recipes to try, if you have any, please share!
