Well, I’m liking my #monthlyveg challenge so far, I tried quite a few delicious butternut squash recipes in January and I’m excited to keep it going with a new vegetable. I’ll have a post up soon with a list of all the butternut squash recipes I tried (and loved all of them!)
For February I’ve chosen Brussels Sprouts. It’s a vegetable I never used to like until a friend of mine introduced me to them roasted and it completely changed my mind. Now I love them and they show up frequently in our dinners but I always cook them the same way – fried with bacon. I’m hoping this month the challenge will encourage me to explore other ways of cooking them, and even incorporating them into dishes rather than simply serving them as a side.
